Zucchini Pesto Pasta



Ingredients:

Penne pasta ⭑

Pesto, homemade or jarred ⭑

Garlic n chives cottage cheese ⭑

Zucchini, sliced

Baby spinach

Pinenuts ⭑

Olive oil ⭑


Method:

Bring a pot to boil and cook pasta as per packet instructions then drain. Meanwhile, heat oil in a pan over a medium to high heat and cook the zucchini until browned on each side. Then simply combine pasta, pesto, cottage cheese, spinach, pinenuts and zucchini in a large mixing bowl.
