Winter Chicken Salad

Free range chicken breast, seasoned baked and sliced ⭑

Green beans, ends trimmed and halved

Baby spinach

Caesar dressing ⭑

Roasties: (per 300 grams veggies)

Potatoes, diced 2cm ⭑

Cauliflower, cut into florets

Parsnip, diced 2cm

2 tablespoon panko breadcrumbs

25 grams parmesan cheese

Olive oil ⭑


Preheat the oven to 180C°. Prepare an oven tray, season and bake chicken for 30 minutes or until cooked. At the same time, prepare another oven tray, add potatoes, cauliflower, parsnip (season to your liking) and toss in oil then bake for 25 minutes or until tender. Once the roasties are tender remove from the oven, sprinkle over breadcrumbs and parmesan evenly then grill for a further 2 minutes or until golden. Once all ingredients are ready, add baby spinach and beans to a serving plate, top with roasties and baked chicken then drizzle over Caesar dressing.
