Veggie & Haloumi Fritters

Ingredients: (makes 10 fritters)

2 cups frozen cauliflower rice

1 cup corn kernels, frozen or canned

1 block haloumi cheese, grated

1 free range egg, whisked

½ cup flour

1 teaspoon paprika

1 teaspoon garlic powder

Chives, fresh or dried


Method:

Boil cauliflower and corn to soften (if frozen), drain then simply add all ingredients into a bowl. Heat oil in a large pan over a medium to high heat. Use egg frying rings to make perfectly round fritters or use your hands to form mixture into patties. Cook on each side for 5 minutes or until golden brown and crispy. Enjoy!
