Teriyaki Meatballs

Ingredients

Free range chicken or pork mince

Olive oil ⭑


Filling: (per 300 grams mince)

½ carrot, grated

6 button mushrooms, grated

1 free range egg, whisked

¼ cup panko breadcrumbs


Teriyaki sauce: (per 300 grams mince)

1 tablespoon tomato sauce

2 tablespoon soy sauce

1 tablespoon sweet chili sauce

2 garlic cloves, grated

2cm piece ginger, grated

3 tablespoons water


Method

In a large bowl mix chicken or pork mince, carrot, mushrooms, egg and breadcrumbs. Roll mixture into balls and set aside. In a small bowl combine sauce ingredients. Heat oil in a large pan over a medium to high heat, add meatballs and cook until browned on all sides. Add sauce, lower the heat and simmer for a further 10 minutes or until meatballs are cooked through. Serve with plain rice or rice salad and vegetables of choice.
