Spinach & Feta Balls

Ingredients:

25 grams baby spinach, finely chopped

Bunch of fresh basil leaves, finely chopped

100 grams feta cheese, crumbled

30 grams grated parmesan

2 tablespoon flour

1 free range egg


Sauce:

1 onion diced

1 tablespoon tomato paste

1 can chopped tomatoes

2 teaspoon brown sugar

1 tablespoon smoked paprika


Method:

Preheat oven to 200°C. Prepare spinach and feta balls, combine all ingredients in a bowl then set aside. Prepare the sauce, heat oil in an oven proof dish over a medium to high heat, add onion and stir until fragrant. Add tomato paste, paprika, canned tomatoes, sugar and season to taste. Spoon tablespoons of the spinach and feta mixture into the sauce then bake for 10 minutes.


To serve:

Salad and toasted ciabatta or with penne pasta.
