Soba Noodle Salad

Serves: (per 200 grams uncooked soba noodles)

Ingredients:

Soba noodles ⭑

Carrot, shaved into ribbons

Kale, roughly chopped

Sugar snap peas

Spring onion, sliced

Lemon juice


Dressing: (1 tablespoon each per 200 grams uncooked soba noodles)

Sesame oil

Rice wine vinegar

Soy sauce


Method:

Bring a pot to boil and cook soba noodles as per packet instructions. In the last 2 minutes of boiling add kale, carrot and sugar snap peas. Drain water then transfer into a bowl. In a small bowl combine all dressing ingredients and pour over the soba noodles and veggies. Season with salt and pepper, garnish with spring onion and a squeeze of lemon juice. Enjoy!
