Salmon, Roast Veggies & Dill Sauce

Salmon fillet

Roast veggies of choice: Potato, kumara, beetroot, red onion etc.

Broccoli, cut into florets

Seasoning, to taste

Dill sauce: (serves 2)

125 grams sour cream

1 tablespoon butter

1 tablespoon fresh dill, finely chopped

1 teaspoon Dijon mustard

1 tablespoon mayonnaise

1 tablespoon lemon juice


Cook the salmon to your preference - Steamed, pan fried or oven baked. Meanwhile, prepare the sauce. Heat butter in a small pot over a low to medium heat. Add sour cream, dill, mayonnaise, mustard, lemon juice, salt and pepper. Stir through until thick and creamy then set aside. Serve with roasted veggies and steamed or roasted broccoli.
