Quinoa & Kumara Salad

Ingredients:

Tri colour quinoa, cooked ⭑

Brown rice, cooked ⭑

Orange kumara, diced ⭑

Baby spinach, shredded

Red onion, finely diced

Pine nuts ⭑

Olive oil ⭑

Salt and Pepper, to taste


Method:

Preheat oven to 120C°. Add kumara to an oven tray, coat with a little bit of olive oil and bake until soft. Meanwhile, prepare quinoa and rice in separate pots as per packet instructions. Prepare all other ingredients then add to a large salad bowl. Allow kumara, quinoa and rice to cool down before adding to the bowl then toss gently to combine all ingredients.


To serve:

Lamb steaks drizzled with tzatziki sauce
