Prawn & Basil Fried Rice

Jumbo prawns

Cooked jasmine rice

Free range eggs

Shallot, diced

Fresh basil, roughly chopped

Chili flakes (optional)

Olive oil

Salt and pepper, to taste

Sauce: (per 2 cups cooked rice)

2 tablespoon soy sauce

1 tablespoon hoisin sauce


In a small bowl combine soy and hoisin sauce then set aside. Heat oil in a large pan over a medium heat. Add prawns, garlic, chili and shallots, stir regularly until fragrant. Push ingredients to one side and add eggs into the pan then scramble. Add rice followed by sauce mixture and basil. Serve immediately.
