Potato Rosti


Potato, peeled and grated ⭑

Onion, grated

Olive oil, for frying ⭑

Salt and pepper, to taste


Simply grate the potato (squeeze excess water out using a clean tea towel) and onion into a bowl, season and combine. Heat oil in a pan over a medium to high heat, spoon in portions of the mixture, flatten and cook until golden brown on both sides.
