Pesto Stuffed Chicken Breast

Ingredients:

Free range chicken breast ⭑

Free range streaky bacon ⭑

Cream or cottage cheese (1 tablespoon per breast)

Pesto, homemade or jarred (1 teaspoon per breast)

Baby spinach, roughly chopped

Olive oil ⭑


Method:

Preheat oven to 180C°. Meanwhile, in a bowl combine cheese, pesto, spinach and seasonings of choice (garlic powder, paprika etc.) then cut a pocket into each breast and add an even amount of mixture into each pocket. Wrap chicken in bacon using wooden skewers to keep intact. Prepare an oven tray then bake for 30 minutes or until cooked.
