Parmesan Crusted Fish

Good quality white fish or chicken

Olive oil ⭑

Salt and pepper, to taste

Parmesan crust: (per 300 grams fish/chicken)

Handful of baby spinach, roughly chopped

½ cup panko breadcrumbs

30 grams parmesan cheese 2 tablespoon mayonnaise


Preheat oven to 200C° and prepare an oven tray. Meanwhile, in a large bowl combine breadcrumbs, spinach and parmesan cheese. Lay fish/chicken flat on the oven tray and spread a layer of mayonnaise then add breadcrumb mixture on top. Bake for 30 minutes or until fish/chicken is cooked. Enjoy!
