Free range chicken breast
3 teaspoon Cajun seasoning (per 300 grams)
White rice, uncooked
Chicken stock (1 part rice to 1 part liquid i.e. 1 cup rice to 1 cup stock)
Spring onion, sliced (optional)
Season chicken on both sides with 2/3 of Cajun seasoning. Heat oil in a large pan over a medium to high heat, cook chicken until browned then transfer onto a plate. Reduce heat to medium to low heat, add rice, capsicum, stock and remaining 1/3 Cajun seasoning and stir to combine. Place chicken on top of the rice, cover and simmer for 20 minutes or until liquid is absorbed and chicken is cooked through then garnish with spring onion (if using).
