One Pan Creamy Garlic Chicken

Free range chicken thighs

Baby spinach, roughly chopped

Baby potatoes, halved

Sauce: (per 300 grams chicken)

1 tablespoon butter or oil

3 cloves garlic, minced

1 tablespoon flour

½ cup chicken stock

½ teaspoon thyme, dried or fresh

½ teaspoon basil, dried or fresh

¼ cup cream or milk

¼ cup parmesan cheese, grated


Preheat oven to 180C°. Season chicken with salt and pepper, place into an oven dish then surround with spinach and potatoes, set aside.

To make the creamy garlic sauce, heat butter in a small pot over a medium heat. Add garlic, stir frequently until fragrant. Add flour then gradually whisk in chicken broth, thyme and basil until incorporated then add cream and parmesan, stir until slightly thickened.

If the mixture is too thick add more cream as needed. Season with salt and pepper to taste then pour sauce into the oven dish. Place into oven and bake until cooked through, grill for the last 10 minutes.
