Omelette 5 Ways

Option 1:

Free range eggs, whisked ⭑

Cold smoked salmon ⭑

Cottage, ricotta or cream cheese ⭑

Baby spinach

Red onion, diced


Option 2:

Free range eggs, whisked ⭑

Cherry tomatoes, halved

Baby spinach

Mozzarella or Edam cheese, grated ⭑

Fresh basil leaves (optional)


Option 3:

Free range eggs, whisked ⭑

Cottage, ricotta or cream cheese ⭑

Rocket (Arugula)

Avocado, diced ⭑


Option 4:

Free range eggs, whisked ⭑

Tomato, diced

Red onion, diced

Avocado, diced ⭑

Feta, crumbled ⭑


Option 5:

Free range eggs, whisked ⭑

Leftover roast vegetables ⭑

Free range bacon, sliced ⭑

Baby spinach

Edam cheese, grated ⭑


Method:

Heat oil in a pan over a low to medium heat then add whisked eggs and cook for a few minutes. Add the remaining ingredients along with seasonings. Flip one side of the omelette or cover with a lid and cook on a low heat until cooked.
