Nachos

Ingredients:

Corn chips or wholemeal wrap, cut into triangles ⭑

Avocado, diced ⭑

Tomato, diced

Red onion, finely diced

Edam cheese, grated ⭑

Sour cream ⭑


Mince base: (per 400 grams mince)

Premium beef mince or bean mix ⭑

1 can chopped tomatoes

1 carrot, grated

½ cup beef, chicken or vegetable stock


Nacho spice mix:

½ teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon garlic powder

¼ teaspoon ground cumin

¼ teaspoon ground coriander


Method:

Preheat oven to 150C°. Place triangle cut wrap pieces onto an oven tray, brush a little oil on both sides and grill until they have achieved a chip like texture (make sure to keep a close eye on them as they brown quickly). Heat oil in a large pan over a medium to high heat and cook mince, add nacho spice mix, tomatoes, carrot and stock. Bring to a simmer, stirring occasionally until thickened. Once chips are done serve with nacho mix, avocado, tomato, red onion, sour cream and cheese.
