Mushrooms, button or portobello

1 can Italian tomatoes

½ cup chicken or vegetable stock

Onion, diced

Garlic cloves, minced

Thyme, to taste

Salt and pepper, to taste

Olive oil ⭑


Heat oil in a large pan over a medium to high heat. Cook the mushrooms, garlic and onion until tender, season then add tomatoes and stock, simmer for 10 minutes then serve with mashed potatoes, parsnip or kumara mash.


Add beef for non vegetarian option.
