Mushroom & Feta Omelette


Free range eggs, whisked ⭑

Mushrooms, sliced

Onion, finely diced

Feta, crumbled

Olive oil ⭑

To serve

Avocado ⭑

Tomato relish ⭑


Heat oil in an oven proof pan over a medium to high heat, sauté mushrooms and onion until fragrant, pour over the egg and tilt to even it out across the pan, crumble feta on top then bake in the oven until cooked through. Serve with sliced avocado and tomato relish.
