Moroccan Rice

Ingredients:

Celery, sliced

Capsicum, diced

Carrot, diced

Onion, diced

Garlic, minced

1 cup chicken stock

1 cup water

1 cup white rice

Lemon juice, to taste

1 teaspoon turmeric

Olive oil ⭑


Method:

Heat oil in a large pan over a medium to high heat. Add garlic, onion, celery, capsicum, carrot and stir until fragrant then stir through turmeric. Add rice, stir for 2 minutes then add stock, stirring until liquid has been mostly absorbed. Add lemon to your desired taste then add water and stir until absorbed.
