Mexican Chicken Bowls

Ingredients:

Free range chicken breast, thighs or tenderloins ⭑

Brown or white rice, cooked ⭑

Mexican spices or Pepper & me Mexellent paste

Corn, frozen or canned

Baby spinach or rocket

Avocado, diced ⭑

Sour cream ⭑

Siracha mayo (see recipe or purchase Culley's) ⭑

Olive oil ⭑


Method:

Preheat oven to 180C°. Prepare an oven tray, oil and season chicken with Mexican spices then bake for 30 minutes or until cooked. Meanwhile, cook rice as per packet instructions. When chicken is cooked, rest then slice. To assemble, toss rice with corn and greens then add chicken, avocado, sour cream and siracha mayo.
