Hoisin Mushroom Sushi Bowl

Ingredients

Sushi rice ⭑

Pinch of sugar

Kewpie mayo

Sesame seeds, to garnish


Hoisin mushrooms

Mushrooms, sliced (portobello, shiitake)

2 tablespoon hoisin sauce

¼ teaspoon Chinese 5 spice

4 tablespoon maple syrup

1 teaspoon garlic, minced


Toppings

Avocado, sliced ⭑

Edamame beans, defrosted ⭑

Cucumber, diced

Carrots, shaved into ribbons or cut into match sticks

Radish, sliced


Method

Prepare sushi rice as per packet instructions. Meanwhile, heat oil in a pan over a medium to high heat, add garlic and cook until fragrant then add in the mushrooms. Add hoisin sauce, Chinese 5 spice, maple syrup and stir until mushrooms are cooked through. Once all ingredients have been prepared, in a servings bowl add rice and mushrooms followed by other toppings. Drizzle over kewpie mayo and garnish with sesame seeds. Enjoy!
