Haloumi Tikka Masala

1 pack haloumi cheese, diced ⭑

Olive oil ⭑

Sauce: (per 1 pack haloumi or 300 grams kumara)

200ml coconut milk

½ can tomato puree

½ red onion, diced

2 tablespoon butter

1 teaspoon garam masala

½ teaspoon paprika

½ teaspoon turmeric

½ teaspoon ground coriander

To serve:

Jasmine rice ⭑

Cucumber, diced

Cashews ⭑


Bring a pot to boil and cook rice as per packet instructions. Meanwhile, heat butter in a large sauce pan over a medium to high heat, add onion, cook until fragrant then add the remaining sauce ingredients, lower the heat and simmer. Heat oil in a pan and cook haloumi until golden on all sides then add into the sauce and stir for a further 2 minutes to let the flavours sink in. Serve with rice then garnish with cucumber and cashews. Enjoy!
