Greek Chicken Bowls

Ingredients:

Chicken breast, baked and sliced ⭑

Brown rice ⭑

Lettuce or baby spinach, roughly chopped

Cucumber, diced

Red onion, diced

Tomatoes, diced

Tzatziki sauce (see recipe)


Method:

Preheat the oven to 180C°. Prepare baking tray, season and bake chicken for 30 minutes or until cooked. Meanwhile, prepare rice as per packet instructions. Once chicken is cooked, carefully remove from oven, rest and slice. To assemble bowls, add rice, chicken, salads and tzatziki sauce.
