Crumbed Fish with Roasted Potatoes & Greek Salad

Good quality white fish ⭑

Potatoes, diced ⭑

Breadcrumb mixture: (per 300 grams fish)

½ cup panko breadcrumbs

1 teaspoon dried oregano

Drizzle olive oil


Cucumber, diced

Tomato, diced

Baby spinach

Walnuts (optional) ⭑

Feta cheese, crumbled ⭑


Preheat the oven to 180C°. Prepare an oven tray, add potatoes, season and toss in oil then bake for 25 minutes or until golden and tender. Meanwhile, in a small bowl combine breadcrumbs, oregano and oil. Prepare another oven tray, lay fish flat, divide and press breadcrumb mixture evenly on the fish. When potatoes have 10 minutes remaining, add fish into the oven for the remaining time or until cooked. In a large bowl, add all salad ingredients into a large bowl. Serve potatoes, salad and fish with your favourite tartare sauce.
