Creamy Chicken & Corn

Free range chicken breast or thighs ⭑

Olive oil ⭑

Salt and pepper, to taste

Sauce: (per 300 grams chicken)

1 small onion, diced

Garlic, minced

1 zucchini, grated

Corn kernels, frozen or canned

½ cup chicken stock

125 grams lite sour cream

Italian herbs


Heat oil in a pan over a medium to high heat. Add onion and garlic, stir until fragrant then add chicken and cook until golden. Add corn, zucchini, stock and Italian herbs, simmer to reduce liquids then stir through sour cream.
