Cottage Pie

Ingredients: (per 400 grams mince)

High quality beef mince ⭑

1 onion, diced

2 celery sticks, sliced

2 medium carrots, diced or grated

1 can chopped tomatoes

2 tablespoon tomato puree

2 cups beef or chicken stock

1 tablespoon Worchester sauce

1 teaspoon mixed herbs

4 teaspoon corn flour mixed with 1 tablespoon water

Salt and pepper, to taste

Olive oil ⭑


Potato topping: (per 400 grams mince)

3 0r 4 medium potatoes, peeled and diced

4 tablespoon cottage cheese (garlic n chives flavour is best)

Salt and pepper, to taste


Method:

Heat oil in a large pan over a medium to high heat and cook onions until fragrant, add mince and stir for 2 minutes then add celery and carrot. Stir through the tomatoes, puree, stock, Worchester sauce and mixed herbs. Reduce the heat and simmer for 30 minutes. Meanwhile, prepare the potato topping. Bring a pot to boil and cook potatoes until tender. Drain the potatoes, season to taste and mash with cottage cheese. Preheat the oven to 220°C. Mix the corn flour and water then add to the mince mixture and stir until thickened. Pour the mixture into an oven dish and spoon the potato mixture on top, spreading the mixture evenly then bake for 30 minutes.
