Corn Fritters

Ingredients: (makes approx. 10 fritters)

1 can whole corn kernel

1 can cream style corn

2 free range eggs, whisked

½ cup flour

1 teaspoon baking powder

Pinch of salt

Spring onion or chives, finely chopped

Garlic, minced

½ cup parmesan cheese (optional)


Method:

Sift flour, baking powder and salt into a mixing bowl. Add whisked eggs, corn, chopped herbs and parmesan cheese (if using) then stir thoroughly to combine all ingredients. Heat oil in a pan over a medium heat. Place spoonful’s of the corn fritter mixture into the pan (this should make about 10 fritters). Cook until bubbles appear on the surface of the batter, turn and cook the other side until fritters are golden brown.
