Classic Ratatouille

2 eggplants, sliced

2 zucchinis, sliced

2 orange kumara, sliced

6 tomatoes, sliced


1 onion, diced

garlic cloves, minced

1 capsicum, diced

1 can chopped tomatoes

Fresh basil, roughly chopped

Olive oil ⭑

Herb seasoning:

Fresh basil, roughly chopped

Garlic cloves, minced

Olive oil Salt and pepper, to taste


Preheat oven to 180C°. Prepare the sauce in an oven proof pan or transfer into a baking dish. Heat oil in a large pan over a medium to high heat, cook onion and garlic until fragrant then add capsicum and tomatoes. Simmer for 10 minutes then add fresh basil. Smooth the surface then add sliced veggies arranged in an alternating pattern. Prepare the herb seasoning in a bowl and spoon over the veggies. Cover and bake for 30 minutes, uncover then bake for a further 10 minutes. Serve with cheesy toasted ciabatta bread.
