Chicken & Roast Veggie Toss

Chicken breast or thigh, cut into strips ⭑

Pumpkin, diced ⭑

Zucchini, diced

Red onion, cut into wedges

Baby spinach

Sour cream

Sweet chili sauce


Salt and pepper

Olive oil ⭑


Preheat oven to 200°C and prepare an oven tray. Bake pumpkin, red onion and zucchini for 25 minutes or until tender. Meanwhile, season chicken with paprika, salt and pepper. In a small bowl combine sour cream and sweet chili sauce (125 grams sour cream to 2 tablespoons sweet chili sauce) then set aside. Heat oil in a pan over a medium to high heat and cook chicken until cooked through. To assemble, toss roasted veggies with baby spinach and chicken then drizzle over the sauce mixture. Enjoy!
