Chicken Parmigiana



Ingredients:

Free range chicken breasts, butterflied ⭑

Marinara sauce

Edam cheese ⭑

Parsley or chives, to garnish (optional)

Olive oil ⭑


Coating: (per 300 grams chicken)

1 free range egg, whisked

½ cup panko breadcrumbs

Garlic n herb seasoning

Salt and pepper, to taste


Method:

Preheat oven to 180C°. Meanwhile, cut chicken in half to butterfly the breast and use a meat pounder to flatten the chicken out then coat in egg, seasoned breadcrumbs and place onto an oven tray, brush oil then bake for 20 minutes. Carefully remove from oven, add a layer of marinara sauce followed by grated cheese and grill for another 5 - 10 minutes.


Serving options:

Garnish with fresh parsley or chives and serve with garlic roasted potatoes or mashed potatoes.
