Brown Rice Salad

2 cups brown rice, cooked

1 red capsicum, diced

Red or spring onion, diced

½ cup currants

2 tablespoon pumpkin seeds


4 tablespoon soy sauce

2 tablespoon olive oil

2 tablespoon lemon juice

Garlic cloves, minced


Add rice, capsicum, spring onion, currants and seeds into a large bowl. Add all dressing ingredients into a jar, shake then pour over the rice salad and toss to combine all ingredients.
