Breakfast Casserole

Ingredients:

1 can baked beans

2 medium potatoes, parboiled and roughly chopped

4 free range eggs

¼ cup Edam cheese, grated

1 small onion, diced

Garlic n herb seasoning

(Optional extras: Mushrooms, spinach, bacon, feta, tomatoes, parsley)


Method:

Preheat oven to 200°C and prepare a baking dish. Meanwhile, heat oil in a pan over a medium to high heat, add onions, potatoes, season and cook until browned on all sides. Add this mixture to the bottom of the baking dish followed by baked beans then make four pockets and crack an egg into each pocket. Layer grated cheese on top then bake for 10 - 15 minutes minutes until eggs have set to your liking.
