Beetroot & Haloumi Salad

Beetroot, diced

carrot, diced

Honey or maple syrup ⭑

Haloumi cheese, sliced ⭑

Baby spinach or rocket

Walnuts ⭑


1 tablespoon balsamic vinegar

3 tablespoon olive oil

1 teaspoon honey or maple syrup


Preheat oven to 180°C. Drizzle honey and oil over the beetroot and carrot on a lined oven tray and bake for 25 minutes or until tender. Meanwhile, in small bowl combine all sauce ingredients and set aside. Heat oil in a large pan and cook haloumi until browned and crispy on both sides. Add all ingredients into a large bowl, drizzle over the dressing and toss to combine.
