Beetroot, Feta & Walnut Salad



Ingredients:

Rocket (arugula) leaves

Roasted or canned beetroot, diced

Feta cheese, diced ⭑

Walnuts, roughly chopped ⭑

Balsamic vinegar

Olive oil ⭑ (1 part balsamic to 1 part olive oil i.e. 1 tablespoon balsamic to 1 tablespoon olive oil)

Salt and pepper, to taste


Method:

Simply add all ingredients in a large bowl and toss to combine.
