Beef & Mushroom Stroganoff

Beef, sliced

Shiitake or button mushrooms

Baby spinach

Red onion, sliced

Sliced gherkin, jarred

Olive oil

Sauce: (per 300 grams beef)

125 grams sour cream, lite

Garlic cloves, minced

Juice of ½ lemon

1 tablespoon parsley, finely chopped (optional)

1 teaspoon paprika


In a bowl add and mix together red onion, parsley, gherkin and brine then set aside. Season beef with paprika, salt and pepper. Heat oil in a large pan over a medium heat, add garlic, mushrooms and stir until fragrant then remove from the pan and set aside. Increase the heat and sear beef on both sides then add approximately half of the gherkin mixture (save other half for garnish) and cook together until beef is cooked to your liking. Add mushrooms and garlic back into the pan followed by sour cream and lemon juice, stir through to combine all ingredients. Serve with rice, fresh spinach and remaining gherkin mixture.
